Vietnamese Chicken Coleslaw

This was a very simple recipe to make, very healthy and full of delicious flavours. It is simply a salad of poached chicken breast, Chinese cabbage, carrots, snow pea sprouts, green onions and mint leaves dressed with fish sauce, lime juice, rice wine vinegar, caster sugar, garlic and chilli. I accidently bought snow peas rather than snow pea sprouts (the new shoots of the snow pea plant) so I just cut them into fine slices and it still tasted great.
Chinese cabbage is also known as Wombok, it has a milder flavour than regular cabbage and is great in coleslaws. It can also be used in any way you would use a regular cabbage: boiled, steamed, stir fried.
