This is a lovely summer dish and very easy to make. You marinate a salmon fillet in soy sauce, brown sugar, garlic and ginger then pan fry it (be careful not to have the pan too hot as the marinade has a tendency to burn). You then make a salad of lebanese cucumber, green onions (shallots), mixed lettuce, cherry tomatoes, mint and coriander. You could use normal cucumber for this recipe but the lebanese are nice as they have very small seeds and are nice and crisp.
The noodles used for this recipe are called Somen noodles and can be found in most larger supermarkets, in the Asian section. Somen are the thinnest of all Japanese noodles (like vermicelli). They are made from organic hard wheat. The noodles are softened by soaking them in boiling water and then rinsed and added to the salad. Finally you add the flaked salmon and sweet chilli sauce.
